A Favorite Dinner

Sometimes on Thursdays I post crock pot recipes, but instead today I decided to post about what I'm making for dinner TONIGHT. It is one of our family's favorites. Meatloaf, homemade mashed potatoes and veggies.
I know - what's so special about that? Nothing - but it's good. It's your basic ground beef, bread crumb, egg and seasonings meatloaf. When I was younger I didn't like gravy, so I found a recipe for a meatloaf glaze that was 2 parts ketchup and one part brown sugar - and we love that stuff. We also like our mashed potatoes with butter and sour cream. Gravy is not necessary.
I like veggies anyway they come - as long as they aren't from a can. Fresh or frozen please.

  2. Yum- I love meatloaf. I have a great recipe as well. Dinner at our house- left over lasagna from my freezer dinner group. I was at the hospital with my youngest- getting his cast off- so glad all I have to do is heat that up and make a salad.

  3. We had the same dinner as you tonight! Meat loaf with roasted potatoes, broccoli and corn! It's always a hit around here!

  5. There is nothing better than a leftover meatloaf sandwich on cheap squishy white bread spread w/ mayo.

  6. Tonight? Chicken breast with pepper (made on the George Foreman), topped with fried onions and salsa...and a side of rice made with chicken broth. Surprisingly simple and even the kids loved this good-for-you stuff.
    Tomorrow? Frozen pizza...I'm with Kate!

  7. I'm catching up. I make a meatloaf for the kids at work that they actually eat!! Instead of breadcrumbs you use a box of stuffing mixs *like stove top*, 1/2 cup bbq sauce *I use more*, cup of water and an egg. It's actually really good! I used the crockpot at work twice this week. Once for potato casserole which turned out really good and the second or apricot chicken. At least one kid liked each item. LOL!!
