Slow Cookin' - Chicken Rice Stew Gone WILD

My husband was laid off again today - so I shall do the Dory (Finding Nemo) chant *just keep smiling* just keep smiling* just keep smiling*. This is relevant to the recipe I am about to post because my friend Melody brought this to my family the last time that he was laid off way back in NOVEMBER. Everybody in my house was sick except for me and Kaitlyn - and this soup just hit the spot. I love love love mushrooms - but even the rest of my group who are not fond of them enjoyed this soup - without picking the shrooms out.

Chicken Rice Stew Gone Wild
3 cups (or 8 oz) mushrooms, quartered
2 medium carrots, sliced
2 medium leeks, (only chop white & lt green part) 2/3 cup
1 pkg Uncle Ben's WILD Rice Mix
1 1/2 - 2 lbs boneless, skinless chicken breast cubed or sliced as desired
5 1/2 cup chicken broth, or a little less

Layer mushrooms, carrots, leeks, then rice. Place chicken on rice and sprinkle seasonings over chicken. Pour broth over all of this. Cook on low 7-8 hours - high 3 1/2 - 4 hours.
Makes 8 servings.
