I made this little recipe up all by my little self - and it was good good good. Let me know if you try it and like it too!
Shredded Chicken Burritos
1 bag of frozen chicken breasts (from Walmart - the green bag!)
2 envelopes of taco seasoning
1 can green chilies (more if you like it zippier!)
1 diced onion
10 large flour tortillas
Burrito fixin's: shredded cheese, salsa, sour cream, jalapenos, etc.
Pour about 2 Tbsp of olive oil in the bottom of the crock pot. Layer half the thawed chicken breasts and half the onion, and 1 pkg. of taco seasoning, then repeat. Pour green chilies on top. Cover and cook on high for 4 hours. (I would not recommend using frozen chicken breasts because of the excess liquid you will have - but if you wanted to use them you could always cook it longer, and pour off the excess liquid.) When the meat is done cooking, use a couple of forks, and pulling away from each other, shred the chicken. Place 10 tortillas on a plate, cover tightly with plastic wrap and microwave for 30-45 seconds. When they are warm, fill each tortilla with approx. 1/2 - 3/4 cup of shredded chicken mixture, and any burrito fixin's that you like.
Viola!
This would be good served with refried beans, spanish rice and/or mexican corn. My family liked it so much I plan to make it often!
